In the wise words of Billy Bob Thornton from Bad Santa, “They can’t all be winners”, and such is the case with today’s one recipe a week meal.

I was given Adam Liaw’s Two Asian Kitchens cookbook back at the beginning of the Malaysia Kitchen Campaign and have been wanting to give many recipes a try. It is quite an elegant cookbook, actually, I recommend it. I wanted to cook the ‘Rum and Lemongrass Roast Pork Belly’ (without the rum), but when I went to the supermarket to find six stalks of lemongrass were $2.45 each, well I’m sorry but that equalled up to the sum total of “oh, hell no” in my head.

To remain somewhat faithful to the list of ingredients, I did buy one and modified the rest to be a more sticky barbeque marinade. The final undoing came with the addition of white pepper. I like it, but usually need to reduce the amount specified as I also find it quite overpowering, and this time I forgot.

In the end, it still tasted fine. Just fine. Nothing incredible. I acknowledge that is probably all entirely my fault!
