I got a big shock when I looked back to find that the last time I’d done a ‘One Recipe a Week’ post for my Living List (spoiler alert: that little baby is going to really heat up over the next two months) was about nine weeks ago. I figured that this long weekend would be the perfect opportunity to do a massive cook up and catch up. Well, that didn’t happen. Not quite. Because if you know me by now you will probably understand that I don’t have that in me… due to my, well, cooking aversion, I suppose you’d say.
I am trying, I really am. So I did manage three. See below. And then I collapsed after finishing the washing up.
Cherry and Apple Strudel
I had some apples that needed cooking + it was cold = strudel (as I’ve made apple pie many times before). The cherries were from the cupboard. It was this recipe, except I used hazelnut meal instead of almond meal, and I’m still unconvinced as to the success of the substitution.
Pork Dumplings
This is another recipe from Adam Liaw’s Two Asian Kitchens cookbook (I’ve made his Roasted Pork Belly before) and this was an unequivocal, masterful success.
Taste wise, at least. I’m the first to admit the presentation and folding of the dumplings needs work.
I made a half batch – that still made a lot! – and they were all polished off for lunch.
Slow Cooked Indian Beef
I’ve cheated here, taking the picture of the picture from the latest Super Food Ideas magazine, from which this recipe is taken. This is a little naughty, I know, but pictures of slow cooked food leave me a little cold. Many dishes sound good in theory, but this is rarely backed up by the visual evidence! I may even have said they remind me of ‘partially-digested slop’ on Facebook the other day.
This photo on the other hand, I like. As I did the meal – although I might leave out the cardamon next time. Do you like cardamon? I’m not so sure I do, although I realise to leave it out would deny a curry its true complexity. Only Adam and I ate it; the kids refused, although Keira did try.
