Okay, I’m going to start plain and simple: zucchini slice. Staple of lunchboxes, healthy party food option and generally darn tasty fare. I’ve always liked it, even as a kid. But I’ve never made it before. There’s probably a hundred versions of it – but this is mine.

Ingredients

2 zucchinis grated
1 carrot grated
Large handful of rindless bacon pieces
1 cup of self raising flour
3 eggs
1/4 cup olive oil
1 onion chopped finely
1 cup of grated cheese
Salt and pepper to taste

Method

Combine all ingredients and pour into a greased oven proof dish or cake pan.
Bake for 30-40 minutes in a 170 degrees (fan forced) preheated oven. Can be served hot or cold.

Notes

The bacon can easily be omitted for a vegetarian version.
