This comes courtesy of Jamie Oliver’s Ministry of Food cookbook.

Ingredients

5 carrots
A few springs of mint and coriander
Salt and Pepper
6 tbs olive oil
2 tbs lemon juice

Method

Grate carrots in the grater blade on a food processor (or, use elbow grease and do it manually!)
Chop mint and coriander and mix with the carrot.
Combine oil and juice together and put dressing over. Top with liberal amounts of salt and pepper

Notes

Simple! I also add feta cheese to it too. Jamie Oliver also suggests adding papadums for a little added crunch, which would be tasty.
