Not so much a recipe as a twenty second solution to a day when I was too hot and tired to do anything. Voilà!
Rockmelon (or cantaloupe, as it’s called here in Victoria a fair bit – not to mention overseas) wrapped in prosciutto. Drizzled in a bit of olive oil. Sprinkle some flat-leaf parsley on top, if desired. Done.
