School goes back this week and I’ve made a fresh batch of these for the lunch boxes. I tweaked the original recipe to add the chia seeds, just to see how they’d go, and to my surprise it worked! Hope you like them too.

 

banana chia chocolate chip muffin

Recipe

60g butter
2 cups self-raising flour
1/2 cup caster sugar
1/2 cup milk
2 eggs
1 mashed ripe banana
1/2 cup chocolate chips
1 tbsp chia seeds

Method

Preheat oven to 180°C (fan forced). Line a 12 muffin tray with paper cases.

Melt butter and set aside to cool slightly.

Sift flour into a mixing bowl, then stir in the remaining dry ingredients.

Mash the banana in a medium bowl, add to this lightly beaten milk and eggs, as well as the butter. Add this mixture to the dry ingredients and gently mix until just combined. Don’t over mix.

Spoon the mixture evenly into the muffin cases. Bake for approximately 20 minutes. Transfer the muffins to a rack to cool. Then eat!
