This is the first recipe I’ve made that I’ve followed down to the very syllable and as such I’m not comfortable posting the method like I have for most of the others so far. Luckily, though, I’ve found it for you via a scanned Google book (which is hardly any better copyright wise, I’d argue).

Fruit Soufflé Tart (+ the pastry)

I’d never made a soufflé before and I was a little scared once I got started and actually read all the steps involved. An extra complication was I only had a 26cm flan tin (which a special trip to Safeway procured) and the recipe asks for a 23cm. But it still worked.
