So you know those days when your oven is being obstreperous for no reason, where you figure if a recipe calls for one kind of biscuit to use as those clever bases that you cook in the oven for a few minutes to make it soft and then you mould it into that tart-shape, but you don’t have that kind of biscuit on hand, but you DO have another that you assume will be a fine substitute?

And it all goes to hell a bit?
